The soup du jour recipe requires cooking onion and celery in a pan along with some chicken broth to soften them. The mixture needs to cook slowly until it has reduced and become tender. Next comes the cream of celery soup. This needs to be added as soon as the onion and celery have finished simmering.

Cook over low flame till squash is tender, 8-10 minutes. Add spinach, tortellini, and basil and cook just till pasta has risen to the surface, 3-4 minutes.
